This is by far, the easiest way to make authentic Nigerian Jollof rice. Whether you are Nigerian or Caucasian that just loves the good old-fashioned Jollof rice, you'll need to save this recipe for when you need it.
Ingredients:
4 Long red peppers 2 large onions 4 fresh tomatoes 2 scotch bonnets Tomato puree - 200g tube Knorr cubes - 2 Bay leaves - 2 Salt to taste Curry powder - 1tsp Dried thyme - 1tsp Long Grain rice - 5 cups 1 cup water - (use chicken stock instead if you have it.)
Please note: The quantity of ingredients used in this video is enough to feed a part of up to 20 guests. So feel free to use more or less ingredients, depending on the quantity of Jollof rice you're planning to make.

This recipe is enough to make 2 large loaves of bread.
Knead the bread dough for at least 10 minutes. You will need to proof the bread dough two times. The first proofing will take about 1 hour to 1 and 1/2 hours. Depending on your room temperature, 1 hour should be just enough. The second proofing needs to be about 45 minutes.

Pureed pumpkin - 3 tbsp
Milk - 100ml
1 large egg
Caster sugar - 2 tbsp
Instant yeast - 1 tbsp
1/2 freshly grated nutmeg
Bake at 170c for 25 to 30 minutes
